Adobo Pork Leg Torta

  • 1/2 cups orange juice, for the adobo 
  • 1/4 cups white vinegar, for the adobo

  • 1 1/2 kilos pork leg, a whole piece

  • 1/2 cups pinto beans, refried
  • some butterhead lettuce
  • 1/2 cups onion, cut into round slices
  • 1 cup tomato, cut into round slices
  • some avocado, thinly sliced

  • For the adobo sauce: On a hot griddle, roast onion, garlic, and tomato until charred. Remove from heat and transfer to a blender. Add achiote, guajillo chiles, orange juice, white vinegar, oregano, clove, salt, and pepper and blend until smooth. Set aside.
  • Preheat oven to 392 °F.
  • Place pork leg on a deep baking sheet. Season with plenty of salt and pepper and spoon adobo sauce over until completely covered. Cover with aluminum foil and bake for 40 minutes over 392 °F.
  • Remove from oven, let cool slightly, and cut pork leg into thin slices.
  • For assembling the torta: Using a serrated knife, cut open bolillo rolls in half. Spread heels with mayonnaise and crowns with beans. On each heel, stack lettuce leaves, adobo pork leg slices, onion, tomato, and avocado. Place bolillo crowns on top. Serve adobo pork leg tortas with pickled Jalapeño chiles.
