  • For the bean stuffing: In a skillet over medium heat, heat lard and sweat onion and árbol chiles. Add beans and mash them with a masher until smooth and velvety. Let cool and set aside.
  • For the gorditas: In a bowl, mix masa dough, lard, baking powder, and salt and knead until incorporated.
  • Using your hands, form masa dough balls. Stuff with a tablespoon of bean stuffing and seal masa dough tightly around the stuffing to form the gorditas.
  • In a skillet over medium heat, fry gorditas for 5 minutes on both sides or until golden-brown. Drain on a paper towel-lined plate.
  • For the green salsa: In a blender, combine tomatillos, serrano chiles, onion, garlic, and cilantro and blend to a sauce.
  • On a chopping board, cut bean gorditas open along the edge and stuff with lettuce and cheese. Garnish bean gorditas with cream and avocado and serve with salsa.
