  • For the carnitas: In a pot, add lard, pork ribs, and pork chump.
  • Pour in orange juice and evaporated milk. Add salt, aromatic herbs, allspice berries, garlic, and onion.
  • Cook for 2 hours or until pork is soft and cooked through.
  • On a chopping board and using a knife, cut pork into small chunks.
  • For the gorditas: In a bowl, mix masa dough, lard, salt, and water. Add water little by little, until the consistency is easy to work with and slightly wet,
  • Using your hands, ball about 1.4 oz of masa dough and flatten them slightly to a 0.1-inch-thick circle. Place on a hot griddle with a dash of oil and cook for 6 minutes over low heat on both sides. Remove from heat.
  • Using a serrated knife, cut open gorditas horizontally at the edge without cutting all the way through. Stuff with cheese and carnitas. Heat on a griddle for 5 minutes until cheese broils.
  • Garnish cheesy carnitas gorditas with onion and cilantro and serve with lime and green salsa.
