Chorizo and Potato Flautas

Flautas, which roughly translates to “flutes”, are a popular Mexican type of long and thin fried tacos stuffed with a variety of ingredients. These crispy flautas recipe uses a succulent potato and chorizo stuffing that will be ready in no time. Topped with lettuce, cream, cheese and a, spicy green salsa, these chorizo and potato flautas are great for get-togethers and family gatherings.

  • 1 tablespoon vegetable oil
  • 1/2 cups onion
  • 1 cup chorizo
  • 3 potatoes, cooked
  • some lettuce
  • some sour cream
  • some cheese
  • green salsa

  • For the chorizo and potato flautas: In a skillet fry onion. Add chorizo and fry until golden brown. Add potatoes and mash them to a purée.
  • On a chopping board, place 2 tortillas. Stuff with chorizo and potato mixture and roll up.
  • In a skillet over medium heat add oil and fry chorizo and potato flautas. Drain on paper towels to remove excess oil.
  • Serve chorizo and potato flautas topped with lettuce, cream, and cheese.
