Grilled Corn on the Cob with Chipotle Mayo

  • 1/2 cups mayonnaise
  • 1/4 cups sour cream, for the mayonnaise
  • 1 clove garlic
  • 2 chipotle chiles in adobo sauce, for the mayonnaise
  • 1 teaspoon seasoning sauce, for the mayonnaise
  • pepper, for the mayonnaise
  • 4 ears corn, in husk
  • 1/2 cups queso fresco, shredded
  • 1/2 cups cheddar cheese, shredded
  • bacon, fried, and cut into cubes
  • lime, cut into quarters, for garnish

  • In a blender, combine mayonnaise, sour cream, garlic, chipotle chile, seasoning sauce, and pepper and blend until smooth. Set aside.
  • On a griddle over direct heat, grill ears corn in husk. Turn ears corn constantly to cook evenly. Remove husk after grilling ears corn for 10 minutes. Cook for 10 more minutes.
  • Spread chipotle mayo on ears corn. Sprinkle ears corn with queso fresco, cheddar cheese, and fried bacon. Serve grilled corn on the cob with chipotle mayo with lime.
