Grilled Corn on the Cob with Jalapeño Mayo

  • 2 cloves garlic, peeled
  • 1 Jalapeño chile, stemmed
  • 2 allspice berries
  • 2 tablespoons lime juice, seeded
  • 1 1/2 cups mayonnaise
  • 1/4 cups onion, finely chopped, for the mayonnaise
  • salt, for the mayonnaise
  • 4 ears yellow corn
  • butter, melted, for the ears yellow corn
  • 1/2 cups queso fresco
  • 1/4 cups cilantro, finely chopped
  • 1 tablespoon Jalapeño chile, trimmed, seeded, and finely chopped

  • In a hot skillet, roast garlic and Jalapeño chile until charred. In a molcajete, crush garlic, Jalapeño chile, and allspice berries until a doughy paste is obtained. Add lime juice. Add mayonnaise, onion, and salt. Mix thoroughly.
  • Brush ears yellow corn with butter. On a grill pan, place ears yellow corn and turn constantly until roasted. Insert wooden stick into each ear corn as a handle.
  • Spread a bit of Jalapeño mayonnaise on each corn on the cob. Sprinkle queso fresco, Jalapeño chile, and cilantro on top. Serve grilled corn on the cob with Jalapeño mayo with lime wedges on the side.
