Huitlacoche Quesadillas

  • 1 tablespoon vegetable oil
  • 1 cup white onion, thinly sliced 
  • 2 cloves garlic, finely chopped
  • 1 cup huitlacoche
  • 1/4 cups epazote, finely chopped
  • 1 pinch salt
  • 1/2 kilos masa dough, blue
  • some water
  • 1 tablespoon lard
  • 1 pinch salt
  • 2 cups Oaxaca cheese

  • In a skillet, heat oil over medium heat. Cook onion, garlic, and huitlacoche. Add epazote, and season with salt. Set aside.
  • In a bowl, knead masa dough with a bit of water and lard. Add a bit of salt. A moist and soft masa dough must be formed.
  • Form masa dough balls. Using a tortilla press, flatten masa dough balls to form tortillas. Cook tortillas on a griddle until they puff up and are cooked through. Stuff with Oaxaca cheese and huitlacoche and let melt. Fold tortillas in half.
  • Serve huitlacoche quesadillas with a molcajete salsa.
