  • 1/4 cups Chihuahua cheese, finely grated, for the refried beans

  • 4 bolillo rolls, cut in half
  • 1/4 cups mayonnaise
  • 1 avocado, cut into slices
  • Chihuahua cheese, cut into slices, for the leftover turkey torta
  • pickled Jalapeño chiles

  • For the refried beans, heat a small pot over high heat. Cook bacon until fat is rendered out. Add beans and Chihuahua cheese. Cook until cheese melts, season with salt, and set aside.
  • Heat a skillet over medium heat and reheat turkey with chicken broth. Remove and set aside.
  • On a chopping board, slice bolillo rolls in half lengthwise. Spread mayonnaise on the top piece of the roll and refried beans on the bottom part of the roll. For a turkey torta: Layer the bottom part of the roll with turkey and brine. For a spicy turkey torta: Layer the bottom part of the roll with adobo turkey, cheese slices, pickled Jalapeño chiles, and sliced onion.
  • Heat leftover turkey tortas on a griddle. Remove from griddle and add avocado slices, extra chiles or brine if desired. Cut turkey torta in half and serve.
