  • For the BBQ sauce: In a skillet, melt butter and fry garlic and tomato for a few minutes. Add mustard, maple syrup, apple cider vinegar, Worcestershire sauce, seasoning sauce, ketchup, apple juice, and chipotle chile in adobo sauce. Season with paprika, salt, and pepper. Cook for about 5 minutes until the liquid reduces and a semi-thick consistency is obtained. Remove from heat.
  • Transfer previous mixture to a blender and blend until smooth. Strain and set aside.
  • In a bowl, add chicken and dust with plenty of salt, pepper, paprika, and cornstarch. Mix thoroughly. Toss chicken drumsticks and chicken thighs until completely covered.
  • In a skillet with vegetable oil, sear chicken drumsticks and chicken thighs completely. Pour a little bit of BBQ into the skillet. Cook chicken drumsticks and chicken thighs. Set remaining BBQ sauce aside.
  • BBQ chicken through. Remove from heat.
  • Spoon a bit of BBQ sauce over BBQ chicken. Serve BBQ chicken with crudités and the dressing of your choice.
