Lentil Quinoa Patties

  • 1 1/2 cups quinoa
  • some salt
  • 1 1/2 cups lentils, cooked
  • 1 egg
  • 1/2 cups Parmesan cheese
  • 1/2 cups breadcrumbs
  • 3 tablespoons red onion
  • 1/2 cups red bell pepper
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon paprika
  • 1 tablespoon fresh cilantro, finely chopped
  • some salt

  • 1 package cream cheese, 6.7 oz, for the garlic dip
  • 1/4 cups yogurt, for the garlic dip
  • 2 cloves garlic, finely chopped, for the garlic dip
  • some lettuce, for serving

  • Preheat oven to 356 °F.
  • In a pot, bring three cups of salted water to a boil. Add quinoa and cook for 15 minutes or until quinoa puffs. Drain and cool.
  • In a food processor, grind lentils to a purée.
  • In a bowl, mix lentils, quinoa, egg, Parmesan cheese, breadcrumbs, red onion, bell pepper, garlic, paprika, and cilantro. Season with salt and pepper.
  • On a chopping board, form patties using your hands.
  • Place on a previously greased baking sheet and bake for 15 minutes or until golden brown.
  • For the garlic dip: In a bowl, cream yogurt and cream cheese. Add garlic, salt, and pepper.
  • Serve lentil quinoa patties with garlic dip.
