  • 3 cups lentils, rinsed and soaked
  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1/4 cups red onion, finely chopped
  • 1 tablespoon shallot, finely chopped
  • 1 1/2 cups bell pepper, mix of colors
  • 1 Jalapeño chile
  • 1 tablespoon thyme
  • 1 tablespoon oregano
  • 1/2 cups cherry tomato
  • some salt
  • some pepper
  • some avocado, for garnish
