  • For the ground beef stuffing: In a skillet with plenty of oil, fry onion. Add garlic, celery, and carrots. Cook until tender. Add ground beef, apple cider vinegar, parsley, almonds, and tomato purée. Season with salt and pepper and cook for 12 minutes. Let cool and set aside.
  • For the sauce: In a blender, combine onion, garlic, oregano, sugar, and chicken broth and blend until smooth. Set aside.
  • In a bowl with hot water, soak cabbage until tender and easy to remove. Remove cabbage leaves and keep them in hot water until completely flexible. Pat dry.
  • For assembling stuffed cabbage rolls: On a chopping board, arrange an easy-to-handle cabbage leaf. Using a spoon, stuff cabbage leaf and roll up. Repeat until all the ingredients are used up.
  • In a saucepan with plenty of oil, arrange stuffed cabbage rolls with ground beef. Pour tomato sauce in and season with salt and pepper. Cover and cook for 25 minutes over medium heat. Serve stuffed cabbage rolls with ground beef on a plate garnished with chopped parsley.
