  • For the soup: Combine garlic, tomato, beef broth, and chipotle in a blender and blend until smooth. Set aside.
  • For the meat: In a small saucepan over medium heat, add oil and fry garlic and celery until translucent. Add ground beef, oregano, and cumin. Let cook until ground beef turns color. Add elbow pasta and cook for 6 more minutes. Add elbow soup and epazote. Season with salt and pepper. Bring to a boil and set aside.
  • Serve beef macaroni soup topped with queso fresco.
