Birria Nachos

  • 1 onion, cut into large chunks, for the adobo
  • 10 cloves garlic, for the adobo
  • 10 Roma tomatoes, for the adobo
  • 1 tablespoon allspice berry, for the adobo

  • 1 teaspoon cumin, for the adobo
  • 1 teaspoon dried thyme, for the adobo
  • 1 teaspoon dried oregano, for the adobo
  • 1/4 cinnamon sticks, for the adobo

  • 3 árbol chiles, trimmed and seeded, for the adobo
  • 4 guajillo chiles, trimmed and seeded, for the adobo
  • 2 ancho chiles, trimmed and seeded, for the adobo
  • 3 tablespoons white vinegar, for the adobo
  • 4 cups water, for the adobo
  • 1/2 onions, for the meat
  • 1 garlic head, for the meat
  • 1 bouquet garni, for the meat
  • 800 grams beef shank
  • 1 kilo beef chump
  • 3 allspice berries, for the meat
  • some salt, for the meat
  • some tortilla chips
  • some black beans, cooked
  • some Manchego cheese, shredded
  • some onion, for garnish
  • some cilantro, for garnish
  • some lime, for serving

Easy
  • For the adobo: Heat vegetable oil in a deep skillet over medium heat. Add onion and garlic and cook for 5 minutes. Add tomatoes and cook until they start to fall apart. Add allspice, pepper, cumin, thyme, oregano, cinnamon, bay leaf, árbol chile, guajillo chile, ancho chile, white vinegar, and a dash of water to soften all ingredients. Cook for 10 minutes. Reserve.
  • Transfer all ingredients to a blender and blend for 5 minutes or until smooth.
  • In a pressure cooker with enough water, cook meat. Add garlic, onion, and allspice. Cook for 30 minutes. Remove lid and add adobo. Season with salt. Cook for 20 more minutes and reserve.
  • Remove meat from broth and chop it. Reserve.
  • For assembling the birria nachos: In a platter serve totopos, black beans, birria, birria broth, and cheese. Broil the cheese. Garnish with onion and cilantro leaves.
