  • For the stuffing: In a skillet over medium heat cook bacon until it renders fat. Add onion, garlic, and meat. Cook until ingredients turn color. Add paprika, cumin, tomato purée, and beans. Season with salt and pepper. Cook for 20 minutes or until liquid reduces. Reserve.
  • For the sauce: Heat a small pot over medium heat with oil. Cook garlic, onion, and tomato until it falls apart, for about 20 minutes. Add chiles, clove, and pepper. Pour in chicken broth and boil until liquid reduces. Season with salt. Cool slightly.
  • Combine sauce with vinegar in a blender and blend until smooth. Adjust seasoning.
  • For assembling the burrito dunked in red sauce: On a chopping board, spread a bed of guacamole on a burrito tortilla. Add meat and a bit of rice. Wrap like a burrito and cut it in half.
  • Serve burrito dunked in red sauce. Top with pickled red onions and lime.
