  • 400 grams ground beef
  • 1/4 onions, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/4 cups breadcrumbs
  • 3 tablespoons vegetable oil
  • 3 tomatoes, for the chipotle sauce
  • 60 grams onion, for the chipotle sauce
  • 1 clove garlic, for the chipotle sauce
  • 2 tablespoons chipotle chile in adobo sauce, for the chipotle sauce
  • 1 cup chicken broth, for the chipotle sauce
  • 1 teaspoon salt, for the chipotle sauce

  • In a bowl, mix ground beef, onion, cilantro, egg, salt, and breadcrumbs. Form meatballs.
  • In a skillet over medium heat, heat oil and sear meatballs. Set aside.
  • For the chipotle sauce: In a blender, combine all the chipotle sauce ingredients except for the salt, and blend until smooth.
  • In the previous skillet, fry chipotle sauce and cook covered for 20 minutes over low heat or until cooked through. Season chipotle meatballs with salt.
