  • 6 tomatillos, roasted
  • 1 clove garlic, roasted
  • 1/4 onions, roasted
  • 3 guajillo chiles, trimmed, seeded, and rehydrated in hot water
  • 2 tablespoons chipotle chile in adobo sauce
  • 1/2 cups beef broth
  • 1/4 cups orange juice
  • 1/2 tablespoons cumin powder
  • 1/4 cups cilantro
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, cut into thin strips 
  • 500 grams beef, cut into cubes 
  • 1 cup green beans, cooked and chopped
  • salt

  • some cilantro, for garnish 
  • some rice, for garnish

  • For the chipotle sauce: In a blender, combine tomatillos, garlic, onion, guajillo chiles, chipotle chiles in adobo sauce, beef broth, orange juice, cumin, and cilantro and blend until smooth. Set aside.
  • In a saucepan with oil, sweat onion until it turns color. Add beef and cook for 8 minutes. Pour chipotle sauce into the saucepan. Season with salt and pepper. Cover and cook for 20 minutes or until beef is tender. Add green beans. Cook for 4 more minutes.
  • Serve green bean chipotle beef stew with white rice on the side garnished with cilantro.
