  • For the chili con carne: In a pot, heat vegetable oil over medium heat. Add ground beef and onion, and cook until ground beef drippings reduce and onion softens. Add carrots, garlic, bell pepper and jalapeño chiles and cook until they turn color.
  • Add crushed tomatoes, tomato purée, tomato paste, chile flakes and ground cumin. Cover and cook over low heat for 30 minutes.
  • Add black beans and yellow corn kernels. Cook for 15 more minutes and season to taste.
  • For the flour tortilla cones: Cut flour tortillas in half, roll each half into a cone, and secure each cone with a toothpick. Place flour tortilla cones on a baking sheet, spray with cooking spray, and bake at 356 °F for 20 minutes or until crisp and golden brown. Let cool and set aside.
  • For assembling the nacho cones: Fill tortilla cones with chili con carne and garnish with guacamole, sour cream, and cilantro.
  • Serve nacho cones paired with a beer.
