  • 5 tomatillos, for the salsa
  • 1/4 white onions, for the salsa
  • 1 clove garlic, for the salsa
  • 1 tablespoon vegetable oil, for the salsa
  • 2 Jalapeño chiles, for the salsa
  • some coarse salt, for the salsa
  • 1/4 cups lime juice, for the salsa
  • 500 grams beef rib
  • some salt
  • some pepper
  • 1 bunch green onion
  • some lime juice
  • some Maggi seasoning sauce
  • some Worcestershire sauce
  • some corn tortillas

  • For the salsa: On a griddle over medium heat char tomatillos, onion, and garlic. Reserve.
  • Using the same griddle, heat oil and fry chiles until golden brown. Set griddle aside.
  • In a molcajete, crush garlic and sea salt until a paste is obtained. Add onion, chiles, and tomatillos and smash to a salsa. Slowly add lime juice to bind the ingredients. Reserve.
  • On the griddle, cook beef rib seasoned with salt and pepper until golden brown on both sides. Remove from heat.
  • Finely chop rib and return to the griddle to finish the cooking process. Add onions, lime juice, seasoning sauce, and Worcestershire sauce, and cook until soft.
  • Serve short rib tacos on hot tortillas with onions, green molcajete salsa, and lime juice.
