  • 1 kilo beef shank, cut into medium-sized chunks
  • 1/4 onions
  • some salt
  • 1 1/2 cups hominy corn, precooked
  • 1 cup pinto bean, cooked
  • 1 serrano chile, cut into thin strips
  • 1/4 cups cilantro, whole

  • In a pot with water, place beef shank, onion, and salt. Cook for 40 minutes. Skim off scum with a slotted spoon.
  • Add hominy and cook for 30 more minutes. Remove onion. Add beans, serrano chile, and cilantro and cook for 10 more minutes once it comes to a boil.
  • Serve Sonora-style gallina pinta hot garnished with onion, serrano chile, and cilantro.
