  • Preheat oven to 392 °F.
  • Arrange sweet potatoes on aluminum foil. Cover with butter. Season with salt, pepper, and nutmeg. Wrap and bake until soft and cooked through.
  • Remove sweet potatoes from the oven. Cool and peel. Grind them with whipping cream, butter, and egg to a smooth purée. Adjust seasoning. Set aside.
  • For the stuffing: Heat a skillet over medium heat with olive oil. Fry onion, garlic, and leek until bright. Add meat and keep cooking until it turns color. Add tomato purée. Deglaze with red wine. Stuff with beef broth. Cook until reduced by half. Season with salt and pepper. Add vegetables and a touch of rosemary.
  • In a baking dish, place stuffing and cover with mashed sweet potatoes. Bake for 10 minutes until mashed sweet potatoes brown. Remove from oven. Let sweet potato shepherd’s pie sit for a while before serving to keep it from losing its juices.
