  • In a pressure cooker with water, cook beef tongue, garlic, onion, thyme, bay leaves, and salt for 45 minutes. Let cool. Carefully remove the pressure cooker lid.
  • Using a knife, strip off thick skin from the beef tongue and cut it into slices. Set aside.
  • On a griddle, roast tomatoes, onion, and garlic. Transfer ingredients to a blender, add beef broth and blend for 2 minutes until smooth. Set aside.
  • In a pot over medium heat, heat olive oil, and fry garlic. Pour blended mixture into the pot and cook for 10 minutes. Add beef tongue, olives, capers, white wine, and güero chiles. Season with salt and pepper. Cook for 5 more minutes.
  • Serve Veracruz-style beef tongue on a plate with toast garnished with parsley.
