  • 1 3/4 cups quinoa, soaked in water 1 day in advance
  • 1/4 cups chia seeds
  • 1 cup water
  • 1/4 cups olive oil
  • 1/2 teaspoons salt
  • 1/2 teaspoons baking soda
  • 3 tablespoons lime juice
  • 1/2 cups amaranth flour
  • 1/4 cups sunflower seeds

  • Preheat oven to 302 °F.
  • Soak chia seeds in half a cup of water until doubled in size.
  • In a food processor, combine quinoa, soaked chia seeds, half a cup of water, olive oil, baking soda, salt, and lime juice. Grind for 3 minutes until a doughy mixture is obtained.
  • Add amaranth flour little by little until completely incorporated.
  • Line a bread pan with parchment paper and grease with cooking spray.
  • Pour mixture into the pan and distribute evenly. Sprinkle with sunflower seeds and bake for about 1 hour.
  • The loaf must be brown on the outside and slightly moist on the inside. Unmold gluten-free quinoa and chia bread and let cool.
