  • 3 ancho chiles, trimmed and seeded
  • 4 guajillo chiles, trimmed and seeded
  • 5 morita chiles, trimmed and seeded
  • 2 egg yolks
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons mustard
  • 2 cups vegetable oil
  • 2 tablespoons white vinegar
  • 1 tablespoon lime juice

  • Preheat oven to 320 °F.
  • For the chile powder: On a baking sheet, arrange chiles and bake for 5 minutes until chiles release their aroma. Remove from oven and cool. Transfer to a blender and blend to a fine powder.
  • In a bowl, whisk egg yolks with salt and pepper until they turn color and double in size.
  • Add mustard and keep whisking. Pour vegetable oil in an even stream until mayonnaise is obtained. Add white vinegar and lime juice while whisking. Add chile powder and refrigerate.
  • Serve homemade spicy mayo in a jar and use it as desired.
