Leftover Turkey Panini

  • 2 tablespoons mayonnaise
  • 4 teaspoons pesto
  • 8 slices grain bread
  • 16 slices provolone cheese, or Swiss cheese
  • 8 slices tomato
  • 1 tablespoon butter

  • Mix mayo and pesto in a bowl. Spread pesto mayo on 4 slices of bread. Place plenty of leftover turkey over the bread slices. Top with 4 thick provolone cheese slices, and 2 tomato slices. Place remaining bread slices on top.
  • Spread butter on top of the leftover turkey panini and place over a grill or a sandwich maker to toast bread and melt cheese for about 3 minutes on each side.
