Easy Brazilian Cheese Bread

Pao de queijo or Brazilian cheese bread is a traditional Brazilian dish. Made with cassava flour and queso de meia cura that comes from Minas Gerais, Brazilian cheese bread can also be made with Gruyère or Parmesan cheese. A delicious and easy snack, Brazilian cheese bread has a soft, moist, and a bit heavy texture that is best enjoyed right out of the oven and served with a cup of coffee.

  • 1/2 cups cow's milk
  • 1 cup cornstarch
  • 1 1/2 cups cassava flour
  • 1/2 cups butter
  • 1/2 cups water, boiling
  • 1 egg
  • 2 cups Mozzarella cheese
  • 1/2 cups Parmesan cheese
  • 1 tablespoon baking powder

  • Preheat oven to 392 °F.
  • In a bowl mix cornstarch, polvilhos, and baking powder. Add milk, water, and melted butter. Mix thoroughly.
  • Add salt and cheese and mix until a dough is obtained.
  • Knead by hand and make small dough balls.
  • Place dough balls in a baking sheet greased with cooking spray or butter and bake until golden. Remove from the oven.
