Mexican Cheesy Potato Fritters

  • 1 teaspoon salt
  • 1/4 cups cornstarch
  • 1 cup vegetable oil

  • In a pot over medium heat, place potatoes and water and cook for 25 minutes or until tender. Drain.
  • In a bowl, place potatoes and mash them with a masher. Add egg, Cotija cheese, cornstarch, and salt. Mix thoroughly.
  • Form potato fritters with your hands and set aside.
  • In a skillet over medium heat, heat oil and cook potato fritters until golden brown. Drain on a paper towel-lined plate.
