  • In a small pot, heat chicken broth over medium heat and cook chicken breast for 20 minutes. Add carrots and cook for 3 more minutes.
  • In a skillet, heat oil. Fry onion and garlic, and add tomato. Transfer to a blender and blend until smooth. Set aside.
  • Pour blended mixture into the pot, add cilantro, epazote, chickpeas, and chipotle chile. Season with salt and cook for 10 more minutes over low heat.
  • Remove chicken breast, shred, and add shredded chicken to the pot.
  • Serve authentic caldo tlalpeño hot garnished with avocado slices and lime wedges on the side.
