Traditionally prepared with yellow chilhuacle chile, this version of mole amarillito calls for guajillo chile, tomatillo, tomato, and spices such as oregano, cumin, and clove. Moreover, this elaborate Mexican sauce is thickened with masa dough and can be served with either chicken or pork, vegetables and chochoyotas.
