  • 1/2 cups chorizo, crumbled
  • 1/2 cups bacon, chopped
  • 2 tablespoons garlic, finely chopped
  • 1 red onion, cut into chunks
  • 2 chicken breasts, skinless, boneless, cut into small-sized cubes
  • 1 cup button mushrooms, sliced
  • 1 yellow bell pepper, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 bell pepper, orange, cut into chunks
  • 1 pumpkin, cut into half-moons
  • 1 pinch salt and pepper
  • 1 cup Manchego cheese, shredded

  • In a skillet over medium heat, fry chorizo and bacon until brown. Add garlic and onion and cook until translucent. Add chicken, season with salt and pepper, and cook until brown.
  • Once the chicken is cooked through, add vegetables one by one, cooking for some minutes before adding the next one. Add cheese and cook for 5 minutes until melted. Adjust seasoning.
  • Serve cheesy chicken alambre hot with corn tortillas, salsa, and lime on the side.
