  • 1 chicken carcass
  • 1/4 onions
  • 1 clove garlic
  • 2 tablespoons vegetable oil
  • 1 cup fideo pasta
  • 1 1/2 cups potato, cut into small-sized cubes
  • 1 cup chayote, cut into small-sized cubes
  • 1 cup carrot, cut into small-sized cubes
  • salt
  • 1 tablespoon fresh cilantro, chopped

  • Heat water in a small pot over medium heat. Add chicken carcass, onion, garlic, and salt. Cook for 30 minutes.
  • In a small pot over medium heat, heat oil. Fry fideo pasta until golden-brown. Pour in chicken broth, potatoes, chayotes, and carrots. Season with salt, pepper, and cilantro.
  • Serve homemade chicken soup in a soup bowl, garnish with cilantro, and serve with limes.
