Chicken & Avocado Burrito

Ideal for breakfast, brunch, and even dinner, this chicken & avocado burrito is easy to put together and will be loved by everyone. Prepared with avocado and juicy chicken marinated in pesto, this burrito is served with a healthy and mildly spicy dressing made with serrano chile, cilantro, jocoque, and yogurt no one can resist!

  • 1/2 cups jocoque, dried, for the dressing
  • 1/4 cups plain yogurt, unsweetened, for the dressing
  • 1/2 cups fresh cilantro, blanched, for the dressing
  • 1 serrano chile, charred, for the dressing
  • 1 clove garlic, roasted, for the dressing
  • 1/8 cups lime juice, for the dressing
  • 1 tablespoon white vinegar, for the dressing
  • salt and pepper, for the dressing
  • 1 chicken breast, boneless
  • 1 tablespoon olive oil, for marinating the chicken breast
  • 3 tablespoons pesto, for marinating the chicken breast
  • 1 tablespoon salt, for marinating the chicken breast
  • 1 tablespoon pepper, for marinating the chicken breast
  • 2 avocados, ripe, cut into large cubes
  • 2 bell peppers, mix of colors, cut into strips
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 1/2 red onions, cut into strips
  • 6 flour tortillas, burrito-sized, warm
  • 1 cup alfalfa sprouts

  • Combine all dressing ingredients in a blender and blend to a smooth and velvety sauce. Season with salt and pepper. Reserve.
  • For marinating the chicken: In a bowl, place chicken and add olive oil, pesto, salt, and pepper. Mix well until chicken is completely coated in marinade.
  • Heat a grill over high heat. Cook chicken until cooked through. Cut into thick cutlets. Reserve covered.
  • In a bowl mix avocado, bell peppers, olive oil, lime juice, and red onion. Season.
  • For assembling the chicken & avocado burrito: Heat a burrito tortilla. Spread a bit of dressing. Add chicken strips, avocado mixture, and alfalfa sprouts. Wrap like a burrito and cut into half.
