  • Season chicken drumsticks and chicken thighs with salt and pepper. Set aside.
  • For the sauce: In a blender, combine roasted tomato, roasted garlic, oregano, chicken broth, and plenty of salt, and blend until ingredients are completely incorporated. Set aside.
  • In a saucepan over medium heat, fry chorizo and red onion. Do not add oil as chorizo will render enough fat out. Set aside.
  • In the same saucepan over medium heat, fry chicken drumsticks and chicken thighs until skin turns golden brown. Add carrots, cooked potatoes, and güero chiles. Cook for 10 minutes over low heat stirring constantly.
  • Pour tomato sauce and beans into the saucepan, cover, and cook over low heat for 10 more minutes. Uncover and add chorizo and onion. Cook for 5 more minutes and remove from heat.
  • Serve chicken & chorizo beany stew in a clay soup bowl garnished with pickled chiles and pickled onions.
