  • 500 grams chicken, ground
  • 1/2 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 4 tablespoons cilantro, chopped
  • 1 cup broccoli, chopped
  • 1/4 cups breadcrumbs

  • For the cascabel chile sauce: Transfer tomato, onion, garlic, cumin, allspice, chicken broth, and rehydrated cascabel chile to a blender and blend. Cook in a small pot for 10 minutes.
  • For the chicken fritters: In a bowl mix ground chicken, onion, garlic, cilantro, broccoli, breadcrumbs, salt, and pepper.
  • Make the fritters using a spoon and cook in a skillet over medium heat with a bit of oil until golden brown. Reserve until ready.
  • Spoon cascabel chile sauce over the chicken fritters. Sprinkle with Cotija cheese and parsley leaves.
