  • For the chicken fritters: Mix ground chicken, garlic powder, onion, parsley, oregano, and egg until incorporated. Season with salt and pepper. Make fritters using your hands. Refrigerate.
  • For the chipotle sauce: Combine onion, garlic, tomato, chipotle, piloncillo, and chicken broth in a blender and blend until a homogenous mixture is obtained.
  • In a saucepan with hot oil, pour chipotle sauce. Add chicken fritters one by one. Season with salt and pepper.
  • Serve chicken fritters in chipotle sauce on a plate with parsley, Cotija cheese, and white rice.
