  • 1 cup Manchego cheese, shredded
  • 1 clove garlic

  • 2 serrano chiles, charred, trimmed, and seeded
  • 1 cup milk
  • 1 tablespoon butter

  • 1 cup bacon, cut into thin strips
  • parsley, leaves, for garnish

  • For the bacon cheese sauce: Combine cream cheese, evaporated milk, Manchego cheese, onion, garlic, serrano chile, and milk in a blender. Blend for 5 minutes to a smooth sauce.
  • In a skillet, add butter and sear chicken breast for 5 minutes on each side.
  • Pour sauce over chicken and cook for 15 minutes. Set aside.
  • In a skillet, fry bacon over medium heat for 10 minutes or until brown. Remove from heat and place on a paper towel-lined tray.
  • Serve chicken on a plate. Spoon over sauce, bacon, and parsley leaves. Serve chicken in bacon cheese sauce with salad on the side.
