  • 8 chicken thighs, and chicken drumsticks, skinned
  • 1/4 onions
  • 2 cloves garlic
  • 1 teaspoon thyme
  • 2 leaves bay
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, cut into cubes
  • 2 tablespoons garlic, finely chopped
  • 3 cups tomatillo, cut into quarters
  • 1/4 cups chipotle chile in adobo sauce
  • salt

  • In a saucepan boil enough water. Once it simmers, add chicken, onion, garlic, thyme, bay leaves. Cook chicken for 20 minutes over medium heat. Remove chicken and set aside with chicken broth.
  • Cook onion and garlic in a saucepan with hot vegetable oil until transparent. Add tomatillo and cook thoroughly. Incorporate chipotle chile, cooked chicken, and chicken broth. Season with salt and pepper.
  • Cook for 10 more minutes until broth thickens a bit and all flavors incorporate.
  • Serve tomatillo chicken stew with cilantro leaves.
