Chicken Milanese with Mole Sauce

  • For the mole sauce: In a small pot over medium heat, fry onion, garlic, and apple. Add ancho chiles, pasilla chiles, morita chiles, white bread, clove, allspice berries, cilantro seeds, oregano, raw sugar, and chicken broth. Cook for 5 minutes until the ingredients soften.
  • Transfer fried ingredients to a blender. Add pumpkin seeds, peanuts, and more chicken broth and blend until smooth.
  • In a pot, heat a bit of oil and pour blended mixture. Add salt and cook for 10 minutes until all the ingredients are completely incorporated.
  • For the chicken milanese: Coat seasoned chicken cutlets with flour. Dip them in egg mixture and bread with ground corn flakes.
  • In a skillet over medium heat, fry chicken milanese with plenty of oil. Drain on a paper towel-lined plate to remove excess oil.
  • Serve chicken milanese spooned over with mole sauce and garnished with candied sesame seeds and chives.
