  • 4 cups chicken broth, for the mole
  • 1 cup mole sauce, paste
  • 1 Mexican chocolate tablet, for the mole
  • 1 pinch salt, for the mole
  • 1 chicken breast, cooked and shredded
  • 1 cup refried beans
  • 8 corn tostadas
  • sour cream
  • queso fresco, crumbled
  • avocado, fanned, for garnish
  • red onion, sliced, for garnish

  • In a small pot, bring chicken broth to a boil. Add mole paste and Mexican chocolate tablet. Season with salt and cook for 10 minutes or until liquid is reduced. Add shredded chicken and cook for 5 more minutes.
  • Spread refried beans on each tostada. Evenly mound the chicken mole on each tostada and top with sour cream, queso fresco, avocado, and red onion.
