Chicken Pibil Mixiotes

  • 1/4 onions, roasted  
  • 6 cloves garlic, roasted  
  • 4 allspice berries, roasted  
  • 1/2 cups achiote, liquid 
  • 1 1/2 cups orange juice
  • 1/4 cups white vinegar
  • 6 chickens, thighs and drumsticks
  • some hoja santa
  • some banana leaf
  • some avocado leaves
  • 1 cup red onion, cut into half-moons, for the pickled red onions
  • 3 Habanero chiles, charred, cut into strips, for the pickled red onions
  • 1/4 cups lime juice, for the pickled red onions
  • 1 teaspoon oregano, for the pickled red onions
  • salt, for the pickled red onions
  • pepper, for the pickled red onions

  • In a molcajete, add onion, garlic, and allspice berries and crush with a pestle until a paste is obtained. Add achiote little by little and orange juice. Mix until perfectly incorporated. Set aside.
  • Place chicken thighs and drumsticks in a pot and pour previous mixture. Let chicken thighs and chicken drumsticks marinate for 1 hour.
  • On a clay griddle, roast banana leaves until softened. Set aside.
  • On a chopping board, place a banana leaf and top with hoja santa leaves, one chicken thigh, one chicken drumstick, and avocado leaves. Season with salt and pepper. Wrap mixiotes with banana leaf. Repeat until all the ingredients are used up. Set aside.
  • In a clay pot with water, place a rack and arrange the mixiotes. Cook for 1 hour over medium heat.
  • For the pickled red onions: In a bowl, combine onions, Habanero chiles, lime, and oregano. Season with salt and pepper. Let sit for 1 hour. Set aside.
  • Serve chicken pibil mixiotes on a plate with pickled red onions, white rice, and tortillas on the side.
