  • In a skillet with plenty of hot vegetable oil fry onion and garlic until translucent. Add tomato and chicken. Cook over medium heat until tomato juice starts to evaporate. Add Poblano chile strips, season with salt and pepper, and cook for 4 more minutes. Remove from heat and cool slightly.
  • For assembling the tacos dorados: Stuff each tortilla with a bit of the previous mixture and roll up. If needed, refrigerate tacos to keep the tortilla from unrolling.
  • Fry tacos in hot vegetable oil, stirring constantly to brown tortillas evenly. Drain on a paper towel-lined plate.
  • Serve chicken & Poblano tacos dorados on a platter. Garnish with sour cream, lettuce, queso fresco, and guacamole.
