Chicken Shawarma

Shawarma is a Middle Eastern traditional dish with an irresistible mixture of spicy flavors. Shawarma is usually made by stuffing pita bread with lamb, lettuce, tzatziki sauce, garlic sauce, red onion, cherry tomato, and cucumber, however, it can also be prepared with different types of meat.   • 1/4 teaspoons nutmeg, for the marinade
  • 1/2 teaspoons ginger powder, for the marinade
  • 1 teaspoon turmeric, powdered, for the marinade

  • 3 cups chicken breast, cut into strips
  • 1 cup plain yogurt, for the tzatziki sauce
  • 1 teaspoon garlic, finely chopped, for the tzatziki sauce
  • 1/2 cups cucumber, chopped into small cubes, unpeeled, for the tzatziki sauce
  • 1 tablespoon peppermint, chopped, for the tzatziki sauce
  • 2 tablespoons basil, purple, finely chopped, for the tzatziki sauce
  • 2 tablespoons lime juice, for the tzatziki sauce
  • 2 tablespoons olive oil, for the tzatziki sauce
  • 1 pinch salt, for the tzatziki sauce
  • 1/2 cups garlic, for the garlic sauce
  • 3 tablespoons lime juice, for the garlic sauce
  • 1 teaspoon salt, for the garlic sauce
  • 1 cup vegetable oil, for the garlic sauce
  • some lettuce, chopped

  • some cherry tomato, cut into halves
  • some cucumber, cut into half-moons

  • For the pita bread: Mix flour, sugar, yeast, and salt. Add warm water little by little. Incorporate with your hands and knead until a homogenous and smooth dough is obtained. Cover with plastic and rest for 15 minutes.
  • For the chicken marinade: In a bowl mix plain yogurt, garlic, olive oil, hibiscus flower powder, cumin powder, coriander powder, paprika, ground cinnamon, cardamom powder, clove powder, nutmeg, ginger powder, turmeric powder, salt, black pepper, chili flakes, and lemon juice.
  • Add chicken strips to the marinade. Mix and marinate for 10 minutes.
  • Heat a skillet over medium heat and cook chicken for 6 minutes. Set aside.
  • For the tzatziki sauce: In a bowl mix plain yogurt, garlic, cucumber, mint, basil, lime juice, and salt.
  • For the garlic sauce: Grind garlic, lime juice, and salt in a food processor or blender. Add vegetable oil in an even stream until completely incorporated and a creamy consistency is obtained.
  • For finishing the pita bread: Once dough has risen, divide into 1.7 oz portions. Ball dough and roll out using a thick stick or a rolling pin. The dough should be about 0.03 inches thick.
  • Heat a griddle or skillet over high heat and cook pita bread on both sides. Flip when bubbles form on the surface.
  • For assembling shawarma chicken: On pita bread, add lettuce leaves, chicken, tzatziki sauce, garlic sauce, red onion, cherry tomato, and cucumber.
