  • For the black bean sauce: In a saucepan with hot oil, fry onion until brown. Add guajillo chile, black beans, chicken broth, and epazote. Cook for 6 minutes. Transfer to a blender and blend until smooth. Return to heat. Season with salt and cook for 5 more minutes. Set aside.
  • In a skillet with hot oil, fry onion. Add chicken and cilantro. Season with salt and pepper and cook until golden brown.
  • Working one at a time, place a tortilla on a chopping board. Add stuffing and roll up. Repeat with remaining stuffing. In a skillet with enough hot oil, fry tacos. Drain and set aside.
