  • In a pot, bring water to a boil and cook chicken with onions, garlic, cilantro, and a bit of salt for about 50 minutes or until cooked through. Reserve the broth and shred the chicken.
  • Transfer tomatoes, onion, garlic, chipotle chile, chicken broth, salt, and pepper to a blender and blend until smooth.
  • In a deep skillet, cook onion with oil until transparent. Add the sauce and bring to a boil. Cook for about 20 minutes, add chicken, season, and cook for 10 more minutes. Serve with tostadas and beans on the side.
