  • 2 cups Valencia rice
  • 2 cups carrot, cut into small-sized cubes
  • 1/2 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 bunch parsley
  • 1 cup red bell pepper, thinly sliced
  • 2 cups chicken breast, cut into small-sized cubes
  • 1 cup peas
  • 1 1/2 cups tomato, in cubes
  • 4 cups chicken broth

  • In a pot with oil, cook chicken breast, garlic, and onion. Mix thoroughly. Season with salt and black pepper.
  • In the same pot, add rice and cook until slightly golden brown. Add small-sized carrot cubes and thinly sliced red bell peppers. Cook for 3 minutes.
  • Pour chicken broth into the pot and lower heat to low heat.
  • Add small-sized tomato cubes and peas.
  • Cook chicken vegetable rice for about 20 minutes. Cover pot until rice has completely absorbed the liquid. Uncover and serve chicken vegetable rice.
