  • For the sauce: Combine onion, tomato, garlic, and guajillo chile in a blender and blend until smooth. Set aside.
  • In a pot, over medium heat, add oil and fry celery until it turns color. Add carrots, mushrooms, and broccoli. Pour sauce into the pot and add green beans, yellow corn kernels, and vegetable broth. Add cooked chicken and cilantro and season with salt and pepper. Cook for about 8 minutes. Set aside.
  • Serve chicken vegetable soup with guajillo sauce in a soup bowl with lime and cilantro.
