  • 3 chicken breasts
  • 1 head garlic
  • 1/8 onions
  • 1 pinch salt
  • 6 tomatoes
  • 3 tablespoons chipotle chile
  • 3 cloves garlic
  • 1 cup chicken broth
  • 1 tablespoon vegetable oil
  • 2 onions
  • 1 teaspoon salt
  • 1/2 teaspoons pepper

  • In a small pot, cook chicken breasts, garlic, onion, and salt for 40 minutes. Let cool and shred chicken breasts.
  • In a blender, combine tomatoes, chipotle chiles, garlic, and chicken broth and blend to a smooth sauce.
  • In a deep skillet over low heat, sweat onion.
  • Add blended sauce and cook for 10 minutes. Add chicken and cook for 10 more minutes. Season.
  • Spread a bed of refried beans on a tostada. Top with chipotle chicken tinga, lettuce, cream, queso fresco, and green salsa.
