  • For the fries: Peel potatoes with a peeler. Cut potatoes lengthwise into 0.1 x 2.3-inch strips. In a pot, heat plenty of oil over medium-low heat and fry potato strips for 20 minutes. Check temperature regularly. Remove fries from oil and drain on a paper towel-lined plate. Season with salt. Set aside.
  • For the chicken breast: In a baking dish with water, place chicken breast. Add salt and pepper and cover with plastic wrap. Using a fork or a knife, poke holes into the plastic wrap. Microwave chicken breast for three 6 minute-intervals. Check chicken breast after each interval as it could be cooked in less time due to the power of each microwave.
  • Shred cooked chicken breast with a couple of forks. Season with salt and pepper. Set aside.
  • On a grill, fry bacon strips over medium-low heat until golden brown. Drain on a paper towel-lined plate. Set aside.
  • Brush sandwich bread with melted butter on one side. On the previous grill, place sandwich bread with the buttery side down and spread butter on the other side. Grill sandwich bread for 45 seconds on each side until golden brown. Remove sandwich bread from the grill and set aside. Repeat until 3 sandwich bread slices are grilled.
  • For assembling the club sandwich: Spread mayonnaise on a sandwich bread slice. Stack sandwich bread slice with a slice of American cheese, a slice of deli ham, and a slice of tomato. Top with another sandwich bread slice. Spread mayonnaise over the sandwich bread slice and top with shredded chicken breast, fried bacon, and lettuce leaves. Before placing the last sandwich bread slice, spread it with mayonnaise and place it on top. Secure club sandwich with a toothpick. Cut club sandwich into 4 portions to get 4 triangles.
  • Serve club sandwich with fries, ketchup, and pickled Jalapeño chiles on the side.
