  • 2 tablespoons coconut oil, divided in two
  • 1 chicken breast, boneless, skinless, and cut into small-sized cubes
  • 2 cloves garlic, chopped
  • 1/8 onions, chopped
  • 2 tablespoons yellow curry powder
  • 1 cup coconut milk
  • 1/2 cups coconut cream
  • 1 pinch salt and pepper
  • 1 cup basmati rice, for serving
  • fresh cilantro, for garnish

  • In a skillet, add a bit of coconut oil and sear chicken. Cook chicken cubes until golden brown.
  • In another skillet, heat a little bit more coconut oil. Cook onion and garlic. Add curry, coconut milk, and coconut cream. Reduce for 10 minutes. Add chicken and season with salt and pepper.
  • Serve curry chicken with white rice hot and garnish with fresh cilantro.
