  • 1 cup chicken, shredded
  • 2 cups mole sauce, paste
  • 1 cup chicken broth
  • 2 grams salt
  • 1/4 onions, sliced, for garnish

  • 1/2 cups sour cream

  • In a skillet, heat oil over medium heat and fry tortillas for 1 minute until golden brown. Drain on a paper-towel lined plate to remove excess oil.
  • Stuff tortillas with chicken. Set aside.
  • In a medium-sized pot, heat mole over medium heat. Add chicken broth, mix thoroughly, and season.
  • For assembling the chicken mole enchiladas: On a plate, place 3 tortillas stuffed with chicken, spoon mole over, and garnish with onion, cheese, and cream.
